Have you seen the movie Chef? - Kyle has

After watching Chef (which, in our opinion is amazing) Kyle was ready to create his own Cuban sandwich, and it was epic.
 
 
For this Cuban you'll need:
1 wheat roll, sliced Cuban style
Sliced dill pickles (to taste)
Yellow mustard
Swiss cheese
Thinly sliced pork (or ham if you can't find pork)
Thinly sliced honey ham
 
Heat a grill pan and melt a small amount of butter
Place the sliced bread with the soft side down and allow to toast
Place sliced pork and ham onto the grill pan and let it warm up
While the meat is warming, spread mustard on both sides of the bread
Layer meat, pickles and cheese onto the bread slices and place back on the grill pan.
(You want the cheese to melt, and you want grill marks on this sandwich, so we suggest placing a heavy plate to weigh it down, unless you're fancy and own a Panini press.)
 
Once the cheese is starting to melt, quickly cut in half and enjoy!
 
Don't bother trying to drink anything with this, you'll be too full.

Te-Killya Tacos

Tequila. 
 
 We love tequila and we love tacos, so to appease Kyle, we combined the two!
(She actually cooked shrimp....baby steps!)
To make this shrimp:
You'll need to devein the shrimp, since the bags lie.
1 cup tequila (whatever is handy, we know you have some on your bar cart)
2 whole limes
2 tablespoons minced garlic
1 table spoon chili powder
Pinch of salt/pepper
Place all ingredients in a large bowl and let sit for a few hours
 

Mango Jalapeno Salsa

To make this salsa you'll need:
1 jalapeno
1/3 cup diced red onion
1/2 cup diced mango
1/4  cup chopped cilantro
2 Roma tomatoes, chopped
1 lime
 
Chop all ingredients into a bowl and squeeze fresh lime juice over the top. Allow to sit for at least 1 hour so all flavors have a chance to mix.
 
Add your favorite taco toppings and enjoy!
 
 
This dish is best served with a frosty marg.

Did we mention we love breakfast?

 
We are huge breakfast fans, so Sundays are our day to mess around in the kitchen and try new things.
This Caprese Benny is sure to start your morning off right.

 
To make the Caprese Benny you'll need:
 
2 English Muffins
4 large eggs (we used organic veg fed)
A large handful of spinach (or two, as it cooks down quite a bit)
1 large tomato
Mozzarella cheese
Pesto
1 teaspoon white wine vinegar
 
Place the English muffins in the oven or toaster to crisp up while you're cooking everything else. Place spinach in a sauté pan with a small amount of oil, cook on low heat for approximately 5 minutes. Slice the tomato and mozzarella into desired thickness. When the English muffins are toasted, layer tomato, spinach and mozzarella on each muffin half.
 
To poach the eggs:
(Poaching eggs can be a little difficult, so we find it easiest to tag team them to ensure they don't overcook.)
Fill a pot 3/4 of the way full of water and add a teaspoon of white wine vinegar (this helps the eggs bind) and bring to a boil.
Quickly crack eggs one by one into a large spoon and gently lay into the boiling water. Once eggs are in, turn the burner down to low to let the eggs cook slowly. Once the eggs have become bright white (and the yolk is no longer visible), remove them from the water, pat dry with a paper towel and gently lay them on top of your caprese muffins. Top entire mixture with a small spoonful of pesto (stay tuned for our pesto recipe, but for now, store bought works just fine.)
 
Break the yolk and enjoy your delicious breakfast!

Overloaded Twice-Baked Potatoes

 
Baked potatoes are usually debuted as a side, but
these potatoes are packed with flavor and veggies, which makes them a meal in themselves!
 
To make these twice-baked potatoes you'll need:
2 Large brown potatoes
1 jalapeno, diced
1 yellow onion
diced mushrooms (we used approximately 10 Baby Bellas)
A large handful of spinach
Broccolini, roughly chopped
Mixed cheese (we used 1 cup)
 
For the sauce you'll need:
Organic plain non-fat yogurt (2 cups)
Onion powder
Oregano
Minced garlic
Black pepper (all ingredients to taste)
 
Place the whole potato in the oven on 375 for approximately 50 minutes. While these are cooking chop all veggies and sauté with a small amount of grapeseed oil for about 8 minutes on medium heat, being cautious not to overcook them. When potatoes are done, cut them in half and scrape the insides into a bowl and add sautéed veggies. Add the cheese (as much as you'd like, but remember, you will be adding more on top) and mix all ingredient together. Spoon mixture back into the potato halves and top with remaining cheese. Place back in the oven for approximately 15 minutes (we lowered the temperature to 350.)
 
While those are finishing up, mix the yogurt, black pepper, garlic, onion powder and Oregano in a small bowl. 
 
When potatoes are finished, top with sauce and diced green onion.

Stacked

 
For this veggie burger stack, you'll need:
 
Vegan ground beef (Kyle calls it the fake meat)
 1 organic Red, green and a yellow bell pepper
1 Red onion
4 small organic portabella mushrooms
1 organic tomato
Amazing spicy guacamole spread
1 egg
 
Guacamole:
Habanero sauce from Trader's
3 garlic cloves
1 chopped jalapeno
2 freshly squeezed limes
salt, black pepper, smoked paprika
 
Vegan meat:
1 package of vegan meat from Trader's
4 splashes of vegan Worcestershire sauce
1 teaspoon of garlic salt
1 teaspoon of chili powder
1 teaspoon of black pepper
1 egg
 
Form the vegan mixture into patties and place on a high heat grill pan
Try to only flip once after about 8 minutes on each side as the meat may start to break apart
Simultaneously, place the veggies in a sauce pan and sear on each side for about 4-5 minutes
After the meat and the veggies are done, carefully layer them on top of each other in order of your preference and top with a fried egg...over easy.
We stress "carefully" as this thing could topple like a Jenga tower.
 
*This one is best served with a glass of water.

Counter Top Pizza Pies

Truffle Oil Pizza

Adding White Wine to the mushroom mixture

 
These counter top pizzas are a good way to enjoy pizza night without spending a fortune, and you can make them exactly the way you want.
 
*Preheat the oven to 400 degrees, both pizzas will cook at this temperature
 
To make the Caramelized Onion and Mushroom Pizza you will need:
 
1 package pizza dough (we chose the Herb and Garlic pizza dough from Trader Joe's)
1/2 large red onion
butter
Approx. 15 mushrooms depending on the size (we used large organic Crimini mushrooms that we cut into smaller pieces)
2 cups white wine (we used a Sauvignon Blanc)
Mozzarella Cheese
Parmesan Cheese
 
To make the caramelized onions simply slice the onion very thin and cook it with a table spoon of butter on very low heat for about 20 minutes
 
To make the mushrooms, quarter the mushrooms and set aside. Quickly sauté some garlic (about 2 minutes) then add the mushrooms. Sautee the mushrooms for about 4 minutes. Then add the wine and allow to come to a simmer. Keep the mixture at a simmer until the wine in evaporated. This usually takes about 20 minutes. Refrain from stirring frequently.
 
 
Roll out the pizza dough to your desired size (we make ours large enough to fill a cookie sheet) Be sure to use a good amount of flour because the dough can be very sticky.
Once rolled out drizzled some olive and layer the mozzarella cheese on the dough. Then add the onions and mushrooms, place in the oven for about 15 minutes, then quickly add the parmesan cheese and place back in the over for about 2 minutes. Remove and let cool slightly before cutting.
 
 
To make the Truffle Oil Pizza you will need:
 
1 package pizza dough (we chose the Herb and Garlic pizza dough from Trader Joe's)
1 jar organic marinated artichoke hearts
1 can organic black olives
1 package organic arugula
Truffle oil
Burrata Cheese (Kyle's favorite)
 
Dice ingredients and distribute evenly over pizza dough
Place in the oven for about 15 minutes and then top with arugula and truffle oil
Bake for another 2-5 minutes until arugula is wilted
 
*This dish is best served with a red wine for the lady and an ice cold IPA for the gent

The Salad

 
This salad is simple, tasty, and perfect for a party.
 
To make it you will need:
1 red onion
1 can of corn (rinsed and drained)
1 can of black beans (rinsed and drained)
2 avocados
Chopped cilantro
2 limes
Chipotle hot sauce (we used Chipotle Tabasco)
 
Chop onion, avocado and cilantro. Combine corn, black beans, diced onion, and avocado into a large bowl. Squeeze two limes over the mix, douse with the chipotle hot sauce and mix together. Sprinkle cilantro over the top as a garnish.
 
The salad can be enjoyed on its own or with tortilla chips on the side.
 
This dish is best served with a table full of friends.
